What is amlou? Ingredients and how to eat it at a Moroccan breakfast

· 1 min read

أملو باللوز من شيظمية حرة

If you follow videos from the Moroccan countryside, you have surely seen amlou on the breakfast table. This brown spread is one of Morocco’s best-known traditional foods, especially in the Souss and the south.

Amlou ingredients

Traditional amlou is made with just three ingredients:

  • Roasted almonds: they give the taste and texture.
  • Argan oil: the famous culinary oil of the south, with its unique flavour.
  • Honey: for sweetness.

There is also peanut amlou instead of almonds, a cheaper and delicious alternative. To make it yourself, see our step-by-step homemade amlou recipe.

How to eat amlou

  • With warm beldi bread straight from the oven.
  • With baghrir, msemen and harcha.
  • At breakfast with a glass of mint tea.
  • In crêpes and pastries, like a chocolate spread.

How to store it

Keep it in a cool, dry place away from the sun. It is normal for some oil to rise to the top over time: just stir it with a spoon before eating.
