Euphorbia (dghmous) honey: what is it and why is it peppery?
· 1 min read
Once you taste euphorbia honey you won’t forget it: sweet at first, then a warmth in the throat. It is one of the best-known Moroccan honeys and one of the most surprising in taste.
What is euphorbia (dghmous)?
In Morocco, dghmous is the name given to several thorny plants of the Euphorbia family that look like cacti and grow in dry areas: from the mountains down to the south, around Essaouira and the Souss. They produce small yellow flowers that bees visit for nectar.
Why is the taste peppery?
The euphorbia plant contains a very hot latex. Some of that heat comes through in the honey, hence the warm feeling in the throat. The intensity varies from year to year and region to region.
Colour: golden to light brown.
Taste: sweet first, then peppery.
Crystallisation: it can crystallise over time; that is natural.
Traditional use
In Morocco people traditionally eat euphorbia honey in cold weather and winter, in warm water or in tea. This is a folk habit, not a treatment: if you have a health problem, see a doctor.
A few precautions
Start with a small amount; the taste is strong.
No honey should be given to children under one year old.
People with diabetes should ask their doctor before eating honey.
