Morocco is rich in plants and flowers, and that diversity shows in its honey: each type has its own colour, aroma and taste, depending on the flowers the bees visited. In this guide we introduce the best-known Moroccan honeys to help you choose.

Thyme honey: strong and aromatic

Thyme honey is one of the most prized and expensive honeys in Morocco. It is on the darker side and its aroma recalls wild thyme. Perfect if you like strong flavours. See thyme honey.

Sidr honey: rich and thick

Sidr (jujube) honey is famous in Morocco and the Arab world for its amber colour, thick texture and rich taste that lingers. Many people take a spoonful in the morning. Sidr honey.

Euphorbia honey: a child of southern Morocco

It comes from the euphorbia plant (dghmous) that grows in the dry south, around Essaouira and the Souss. Its signature is a light peppery sensation in the throat after tasting. Euphorbia honey.

Eucalyptus honey: a companion for cold days

A distinctive aroma and a fairly strong taste; many Moroccans prefer it in winter with hot drinks. Eucalyptus honey.

Wild herb honey: the balanced one

Bees collect it from many wild herbs, so its taste is rich and varied, neither too strong nor too light. A good choice for everyday breakfast. Wild herb honey.

Orange blossom honey: light and sweet

From orange blossoms, it is pale, sweet and delicate. Ideal if you prefer a mild honey, and for pastries and yoghurt. Orange blossom honey.

Carob honey: dark and rare

From carob tree flowers, it is dark with a rich, fairly strong taste. Carob honey.

Which one should I choose?

  • You like strong flavours: thyme or euphorbia.
  • A thick, rich honey: sidr.
  • For everyday breakfast: wild herbs.
  • Mild taste at a good price: orange blossom.
  • Cold days with a hot drink: eucalyptus.
  • To taste before buying a kilo: take a 500 g jar.

Storage tips

  • Keep it in a dry place away from the sun, not in the fridge.
  • Close the jar well after each use.
  • If the honey crystallises, place the jar in lukewarm (not hot) water and it will become liquid again. Crystallisation is natural.
  • Honey must not be given to babies under one year old.
